Lemon Garlic Butter Baked Salmon!!!

Hello, and welcome back!

This baked salmon is SUPER tasty😋, and, because it’s so easy and quick to make, this is the dish that I probably make most often. This recipe is easy to adjust for the amount of salmon you have, so you can make a little for 1-2 meals or a lot if you’d like to make meals for a few days or a dinner party.

As far as sides go, I typically make a mixed veggie stir fry, zoodles, or almond butter mashed sweet potatoes (just mix 1-2 spoons full of almond butter into a bowl of mashed sweet potatoes, super tasty), but this will go well with almost anything. Enjoy!

Ingredients: (this is for baking a 1.5 pound piece of salmon, so adjust the ingredients as needed for more or less)

  • 1.5 pounds of salmon. Skin and bones removed if possible, but will still turn out well if not.

  • A couple lemons.

  • Avocado oil (or whatever oil you like to use)

  • 4-6 tbsp. of Ball Rub

  • 6-8 tablespoons of clarified butter (use more or less to your liking)

  • 4 cloves of minced garlic

  • A big pinch of dried and sifted thyme

Materials Needed:

  • Aluminum foil

  • microwave safe mixing bowl

  • edged oven pan or pyrex

Recipe:

  1. Start by preheating your oven to Bake @ 350 F.

  2. Pull out a long piece of aluminum foil that’s about 3 times as long as your piece of salmon

  3. Spray the middle third of the foil with a little non stick spray (I like to use avocado oil!)

4. Thinly cut your lemons into 1/4-1/8” slices and spread them out on top of the oiled foil in the shape of your piece of salmon

5. Place your salmon on top of the lemons, apply Ball Rub to one side, flip the salmon and apply Ball Rub to the other side. (NOTE: I sliced my salmon before seasoning it because I had skin still on the bottom. DON’T DO THIS. This is really unnecessary since it’s so easy to break apart after cooking whether you have the skin on still or not.) It’s up to you how much to apply depending on how spicy you want the dish to be, and it really depends on the surface area of your salmon cut, but I typically try to make sure the whole area has at least a little sprinkled on it (2-3+/- tbsp per side)

NOTE: DON’T CUT IN SLICES LIKE THE PICTURE! I did this because there was skin on the bottom, it was ultimately a waste of time since the salmon is so easy to separate after it is cooked.

6. Place you clarified butter in a microwave safe bowl and melt it in microwave, approx. 20-30 seconds. Once it’s melted mix in your minced garlic and thyme, and then pour the entire mixture as evenly as you can onto the salmon

It’s a good idea to place the foil and salmon on your oven safe pan or dish in case some of the butter leaks out while you are wrapping up the foil.

7. Wrap up the tin foil as air tight as you can so that as little moisture escapes as possible. Place the wrapped up filet on your oven safe pan

8. Place in the oven for 25 mins @350, then Broil for 2 mins. immediately after

9. Let it cool for a few minutes after it’s done and then enjoy!

If when you are saving your leftovers, keep some of the lemon slices too. They add extra flavor when you heat it up again in the microwave.
